Often, for special occasions, I make something baked for my boyfriend. Recently, my cupcakes have been far too naked, resembling muffins. So, with Valentine’s Day quickly approaching, I decided that this year I was going to find something delicious to top my baked goods, and hence the great tofu frosting experiment was born.
I’ve been searching recipe zaar trying to find the right recipe, and found one which could be easy adapted to my liking. My experimental cake was a Diet Orange Pop Cake (a take off from the Diet Coke Cake) made with a Glutino Vanilla Cake mix. Since the cake was tinted orange from the Diet soda, I decided to go with a green icing for my experiment. I have dubbed it “Shrek Cake”… isn’t it pretty? The icing is a little softer than I would like, so on Saturday I’ll be using extra firm Mori-nu instead of the firm that I used. But I have to say I’m very impressed with the icing. Not only is it tasty, but it was extremely easy to make. Hopefully I can make it a little prettier, after all, it is for my sweetheart. ♥
ps. as you can see, it was so good I actually forgot to take a picture BEFORE I dug in. It just looked too tasty.
